If you're looking to watch "Yellowstone" on Paramount Plus, you're going to need to keep on looking. It won't be there streaming there any time soon.

Peacock is the exclusive streaming service for all prior seasons of “Yellowstone” online, although some select episodes may be available on other streaming services. Seasons 1 through Part 1 of Season 5 are available on Peacock, but those episodes that are part of Season 5 Part 2 won’t be available there until after the season is over.
