Cassis, the new French bistro planned to open in the fall at 333 N. Water St., made Bon Appetit's list of the 9 Must-Visit Restaurants to Try in 2025.
Traditionally made with crème de cassis (currant liqueur made with blackcurrants) and brut champagne, it is named after Canon Félix Kir, a French priest who popularized the drink in Burgundy.
It is also a great cocktail ingredient and is used in Gascony to create a “Pousse Rapière” cocktail which is made in the same way as a Kir Royale but substituting the Armagnac Liqueur for the Cassis.
