The SE and Pro Max have a 2.5g RJ45 port if you ever think you'll have more than 1 gigabit service. With the Pro you'll have to purchase an SFP+ to RJ45 adapter capable of 2.5g if your modem or ONT has a 2.5g RJ45. I would really only recommend or even consider the UDM PRO max for two reasons.

So I wouldn't need to change any group policy or host-based configs, the internal hosts wouldn't ever know they are querying the PiHole.
